Apple Raisin Skillet French Toast

A unique spin on french toast made with simple ingredients that you will love. This dish is great to eat on its own or topped with maple syrup, peanut butter, fruit, or your favorite breakfast topper.

Ingredients

  • 5 slices bread, can be stale
  • 2 tbsp avocado or coconut oil
  • 1 apple, cubed
  • 3 tbsp raisins
  • 5 eggs
  • 1 cup coconut milk
  • ¼ tsp salt
  • 1 ¼ tsp cinnamon
  • 2 tbsp brown or coconut sugar

Instructions

  • Cut the apple into medium cube sized pieces. Set aside in a small bowl.
  • Cut the bread slices into small cubes (keep crusts on).  Heat 1 tablespoon of the oil in a large, flat skillet. Once warm, add bread cubes. Cook, stirring frequently until lightly browned.
  • In a separate skillet, while the bread is toasting, heat remaining 1 tablespoon of oil. Add the apple cubes and 1/4 teaspoon of the cinnamon.  Cook until the apples are soft and coated with cinnamon.  Then, add raisins to the pan and cook for one more minute.
  • In a medium bowl, combine eggs, coconut milk. salt, remaining cinnamon, and sugar.
  • Spread the cooked apples and raisins over the browned bread pieces.  Then, pour the eggs and milk mixture over all, coating all of the bread.  Cover the pan and cook over medium-low for 8-10 minutes until the eggs are set.

Notes

Serve with additional maple syrup if desired.
Feel free to swap any of the ingredients with anything you have in your kitchen- even things that are going stale. We used an old apple and stale bread and it tasted wonderful.
