Green Beans and Ice Cream – a magical combination!
I LOVE SPRING!! It’s amazing to see everything come back to life – out of hibernation from the long winter. That’s how I feel this time of year too, like I’m coming back to life. One reason for that – my garden!! I love to garden and always have. When I was in dental school, we lived in a small town house. We were not supposed to plant anything in the flower beds outside, so I had a container garden. And when I say container garden, that is very broad – I planted in pots, tubs, even an old suitcase I bought at a garage sale. My entire patio was covered in plants. Every home we have lived in since that time I’ve had a bountiful garden. Some people say I have a green thumb, but I think my garden grows because the plants can feel my love… Okay, that’s really hippie sounding, but it’s true! I love gardens and plants because I love vegetables. (I’ve attached a couple of pictures of my last year’s garden. New home, new garden this year – I’m excited!)
Now this love affair with veggies started pretty much from day one. When I was a baby, I wouldn’t eat ice cream. My parents figured out if they put a green bean on the front of the spoon, I would eat the ice cream to get to the bean. (This sounds a bit like reverse child abuse, but I could be wrong!) My favorite snack growing up was the left-over veggies in the fridge from dinner the night before. I even remember an odd date in high school – I was chomping on a carrot while my boyfriend chowed down on a big ice cream sundae. Vegetables are my friends.
This strange love has led me down interesting roads. I’ve always cooked with a lot of vegetables and fruits, but 2 1/2 years ago we got serious about it. My husband was having chronic headaches and had very high cholesterol, my kids were always sick, my gut was unhappy most of the day…and we thought we were pretty healthy eaters. I was looking for some answers, and found Green Smoothie Girl from right here in Lindon. We started making green smoothies every day (much to the dismay of the kids) and got rid of everything white – white sugar, white flour, white rice. Within a month, no more headaches, my husband’s cholesterol had dropped 30 points and my gut felt better than it ever had. We continued and added salads, ate more raw foods, changed our thoughts about fat and added whole grains. More results – kids weren’t sick as much, my husband lost 15 pounds and I lost 5. We were changing our bodies from the inside out, and we could tell.
These were good changes, and we are continuing to eat this way today. The kids even look forward to the green smoothies in the morning! Because we feel so good, we want to share what we’ve learned with others. I hooked up with another health guru this summer – her name is Karen Urbanek from Wisconsin. She has run a wellness center there for years, and just opened up a new store in Draper. It’s called Karen’s Energy, and boy is that ever right on target!! This lady has 10 children, runs 4 businesses and talks a mile a minute. She gives a talk called “Never be Sick Again!”, and it’s incredible to hear. I have a special treat for you (remember the surprise I promised?). I’ve asked Karen to come and speak to us and teach us some of her secrets. We’ve booked her for a private, invitation only event on Wednesday, April 17th at 7:00. It will be in American Fork, and YOU ARE INVITED!! We will have treats, recipes and hints to share.
